As the weather warms up, the chickens are laying more and more eggs, and my church folks are bringing me loads! I just came home with two dozen today! 😅 So I’m going to make a big batch of these make-ahead egg & cheese sandwiches (Bon Appetit https://www.bonappetit.com/recipe/make-ahead-egg-and-cheese-sandwiches) for the week, and maybe try that lemon poppyseed cake that Chelsey shared!
The recipe that means spring for me is my mom’s Hot Cross Bun recipe that is actually from the March 1978 Bon Appetit magazine. We are not religious, but my mom grew up in a Christian household and carried this tradition into our family. If I’m home on Good Friday, I always try to make these!
My moms homemade strawberry pie from an old church cookbook - it has jello and 7-up in it and my kids beg for it when strawberries are in season!!
Those old church cookbooks are GOLD.
These peanut spring roll bowls are perfect for Spring! They are light, healthy, and can be modified so many different ways. But definitely don’t skip the homemade peanut sauce!! https://www.halfbakedharvest.com/peanut-chicken-spring-roll-bowls/
I love a bowl meal.
This is good anytime of year, but I seem to make it most around Easter. Cinnamon Crumble Banana Bread from the cookbook It’s All American food by David rosengarten. Always a hit with my kids! http://oncallcook.blogspot.com/2010/12/banana-bread-with-cinnamon-crumble.html?m=1
My mouth is watering.

Yum! Theo loves eggs, so we go through a ton each week. I'm jealous of those of you with chicken-tending friends 😆
I’m not great with seasonal cooking but this quinoa salad is almost always on hand at our place during spring and summer: https://cookieandkate.com/best-quinoa-salad-recipe/
YUM this looks like it would be great with any grilled protein.
Early spring means asparagus, which is one of my favorite veggies. I love this asparagus tart (or a creamy asparagus soup)!

I love asparagus, too! Especially grilled.
I love to make this feta yogurt dip and serve it with a plate of veggies and crackers. Be sure to include blanched asparagus! https://www.seriouseats.com/whipped-feta-dip
Ooo yummm
This looks absolutely delicious!
